Garden Scrambled Eggs

Enjoy the start of your day with a freshly prepared breakfast. This is a favorite!

INGREDIENTS

  • 4 egg whites
  • 1/4 cup diced green peppers
  • 1/4 cup diced onion
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for cooking
  • Whole grain toast
  1. Heat a frying pan over medium heat and add a little olive oil.
  2. Sauté the diced green peppers and onions until they are softened.
  3. In a bowl, whisk the egg whites until frothy.
  4. Pour the whisked egg whites into the pan with the peppers and onions.
  5. Stir continuously to scramble the eggs and mix them with the vegetables.
  6. When the eggs are almost cooked, add the diced tomatoes and shredded mozzarella cheese.
  7. Continue cooking and mixing until the cheese is melted and the eggs are cooked to your desired consistency.
  8. Season with salt and pepper to taste.
  9. Serve hot over buttered whole grain toast.
