Are you enjoying this cooler weather? I am loving every minute! October came and went so fast, my head is spinning. We enjoyed this Mac n’ Cheese the night before Halloween. The best word to describe this dish is “Comforting.”
Creamy pasta with yummy cheese! You just can’t go wrong. Pimientos and bread crumbs add a flavorful twist to an already family favorite.
What You’ll Need
1 Tbs. unsalted Butter
1/4 cup all-purpose flour
1/2 tsp. salt
1/4 tsp ground pepper
2 cups grated sharp cheddar cheese
1 to 2 cups of milk ( I prefer mine more creamier)
2 cups elbow macaroni cooked and drained
2 jars (2 0z.) pimientos
1/3 cup mayonnaise
1 cup plain bread crumbs combined with 2
tablespoons unsalted butter, melted
What You’ll Do
Preheat oven to 350. Prepare a 2 quart casserole with cooking spray.
Whisk flour, salt and pepper into milk. Stir in 1 1/2 cups cheese and when melted add the macaroni, pimientos and mayonnaise.
Add remaining cheese and bread crumb topping.
Bake for approximately 30 minutes.
