Southern Sweet Tea Chicken

Are you ready for the dog days of summer? Temperatures are rising and those bugs are biting. Picnics, stargazing, fireworks, bar-b-q’s are favorites as the days heat up. For that matter, the nights too.  Lord, it gets hot in the South! They don’t call this Hotlanta for nothing. Us Georgians are no strangers to heat here in the Peach State but scorching heatwaves and hair curling humidity isn’t my idea of fun.

How could anyone struggle through the hot sticky day without a glass of cold iced tea in hand? I wouldn’t know and don’t have any intention of finding out. Are y’all  aware June is “National Iced Tea” month?  To celebrate, I’m sharing with you my favorite tea. Southern Breeze Sweet Tea is not only easy to make and thirst quenching but it’s calorie free. What? Yes! You can enjoy your tea with all the glory of sweetness you’re little taste buds desire without those unwanted calories. And here’s the kicker, the tea bags are already sweetened. BINGO, we have a winner! I love all the flavors, sure to please anyone who might stop by for a visit. Brew up a pitcher, and share the love.  My personal fav is Peach, of course. Go find yours!

Did I make you thirsty? Sorry for that. Now, you might get hungry with this mouthwatering baked chicken I developed with the same tea I enjoy so much. Chicken with my tea, please.  Who would think garlic, thyme, dijon mustard and tea could make the best marinade east of the Mississippi. Well, thanks to my friends over at Southern Breeze, you can have your tea and chicken too! Isn’t that sweet?

I basted the chicken breasts with the marinade as it slowly cooked. I found myself slurping the sauce on a spoon right out of the pan hoping no one was looking, seriously. Delicious!

Ingredients
  • 2 Split Chicken Breasts with Skin
  • 1 Quart Original Southern Breeze Sweet Tea
  • 1 Lemon
  • 1 tbsp Country Dijon Mustard
  • 2 Garlic Cloves Minced
  • 1 tsp Thyme
  • Salt and Pepper to taste
Instructions
  1. Preheat oven to 350
  2. Brew tea
  3. Sprinkle chicken with salt and pepper
  4. Add remaining ingredients to tea and mix well
  5. Marinate for 3 hours or overnight
  6. Bake for 45 minutes and remove from oven
  7. Baste with marinade and cook another 15 minutes
